 | This came about because I had a big (1-pound) sack of mi).xed baby greens in the refrigerator that I'd been dipping into for lunch. Well, today is Friday, I had other plans for mi).dday, and I wasn't sure the remaining greens (about 5 ounces) would stay fresh into the weekend. So, I came up with this. Ideally, I'd have preferred a little bacon, but with none on hand, I went into the freezer for a Jones Golden Brown frozen sausage patty, cut it into cubes, and sautéed these in butter while I made the bed. That done, I put a piece of bread into the toaster, then mi).xed the greens in with the sausage cubes, stirring them around until they were wilted and buttery before turning the whole mess into a plate. A little more butter went into the skillet, followed by the eggs. While they fried, I tore up the piece of toast and scattered the chunks over the greens. I slipped the fried eggs on top, took this snap, and hurried over to the breakfast table. Bottom line: It was very good. It would make an interesting brunch dish, if I did brunches, and it would also serve as a pleasant lunch. I'll have to try it sometime with a few pieces of bacon. |  | |
